With Pancake day looming it seems only fitting to do a spontaneous Pancake day post. That being said, I’ve tried something a little different – skinny pancakes! My version of skinny pancakes involves no butter, flour or milk. It’s taken from the Paleo diet. I’m definitely not up to speed on the diet itself, or by any means am I following it, but it’s a great way to have a treat and be healthy at the same time.
You will need…
- 2 small ripe bananas
- 2 eggs
- ½ tsp. vanilla extract
- ¼ tsp. ground cinnamon
- 1/8 tsp. baking powder
- Honey (optional) – maple syrup can also be used
- Blueberries (optional)

PS. While I am no Delia Smith in the kitchen, this recipe was very simple to cook, extremely tasty and also filling. To satisfy your own taste buds, alter the recipe as desired to create a more personalised pancake!
